4-5 lb Pork loin ($2.09/lb at Aldi’s right now)
Brine:
1 Qt H2O
1/8 C Sugar
1/8 C Salt
2 Bay Leaves
1/2 tsp Chili Flakes
Juice of 1 Lemon

Brine pork for 3-4 days. Smoke at 220F for 3 hours or preferred temp is reached (I smoke mine to 145F). Cool and portion into chops. To serve sear chops in a hot pan.
I got 12 chops out of the 5lb loin and cut the rest (maybe 2.5 chops worth) into thin slices we eat for breakfast. This recipe has been my family’s favorite since we found these loins; I have 2 prepped and ready to go in the freezer and there is another raw one in my fridge right now that needs to be cooked!
