I added a bit of char to the sausage, and sauteed the onions and garlic. Add the smoked sausage, corn, potatoes, onion, garlic, broth, and season to taste with salt, pepper and Cajun seasoning to the slow cooker. Stir to mix well. (I also use msg, to taste but this is also optional)
Cook HIGH 2-3 hours or LOW 4-6.
Right before serving, cook the shrimp on the stove with a bit of Cajun seasoning. Stir the shrimp into the slow cooker.
Serve over rice if you want! This was fine just on its own.

Cajun Style Andouille Smoked Sausage, 13 oz, cut into 1-inch rounds
15 ounces canned corn, drained & rinsed
1.5 pound red potatoes, diced
1 onion, diced
6 cloves of garlic
Dried chili pepper (optional)
Salt / pepper to taste
