Collard Greens with Pancetta and Shredded Pork Chops

    Around 8 cups of collard greens, stems removed, cut thin.

    1 package pancetta

    3 pork chops

    1 Tbsp brown sugar

    3 cups chicken broth

    2 Tbsp apple cider vinegar

    1/4 tsp salt, plus seasoning for chops

    1/4 tsp pepper, plus seasoning for chops

    1/4 tsp red pepper flakes

    Add the collard greens to the slow cooker.

    Sauté the pancetta till fat us rendered. Dump pancetta and all the rendered fat on top of greens.

    Season pork chops with salt and pepper, put on top of greens.

    Add brown sugar, chicken broth, apple cider vinegar, salt, pepper, and red pepper flakes.
    Cook on low for 7-8 hours

    Remove the pork chops and shred them. Add the meat back to the greens and stir.
