Mishmash breakfast casserole -leftover remake

    Just a leftover egg bread pudding

    1 to 2 slices of leftover bread torn into bite size pieces,
    1-3 tbsp olive oil,
    2 eggs,
    1/4 c cottage cheese
    4-5 grape tomatoes halved,
    a herb spice blend about a tsp,
    maybe 1/4 cup milk
    handful of spinach torn to bite size pieces.
    1- 2 tbsp parmesan cheese shredded
    and a bit of leftover basil pesto I found

    Whisked eggs, milk, olive oil together with herb blend and a bit of salt. Added in spinach, tomato’s cottage cheese,found my pesto and added a tsp or two of that. . Oiled my mini casserole dish, layered in my torn bread slices. Poured egg mix over it, topped with Parmesan. Baked for 30 – 35 minutes at 375.

    Pretty good f or leftover mishmash I found in my fridge.

    Sounds like a pretty hearty meal. Looks good too. Good on you for putting it all together
