I found this 10 oz bison ribeye at safeway for $15. I don’t usually spend more than $10 on a steak but I saw the marbling on it and couldn’t resist. I dry brined it with salt, pepper, and garlic powder for about 20 hours in my fridge then let it come to room temp. I then pan seared it in some butter and garlic cloves. After resting for about 5 min I mixed the leftover juices and pan butter into a couple fork-mashed potatoes. The doneness is right at my liking (medium I think). Flavor wise, a bit more beefy that cow but also a tad more tough. The cap on this this was super tender and literally the best bites of steak I’ve ever had!
