    So I’ve been trying to reduce my meat intake without sacrificing the protein I want to support my fitness goals for quite some time now. One of the best (and frankly only) ways I’ve managed that is to mix legumes into ground meat, like in a beef and lentil Chili.

    One recent success in the same direction is this edamame and ground pork stir fry. Edamame are young soybeans. They’re rich in fiber and protein, and they can be used to create rice bowl toppings. Prepare some extra edamame and keep them on hand as a healthy, meal-prep friendly snack.

    The centerpiece of this recipe is pickled snow cabbage. Snow cabbage is a brassica, like kale and cabbage. When pickled, it adds briny, tangy notes to brighten up this stir fry and elevates it to the next level.

    **Ingredients**

    * Edamame
    * Ground pork
    * Pickled snow cabbage
    * Garlic, soy sauce and a pinch of sugar

    **Instructions**

    1. Blanche edamame in salted water for 3-5 minutes. Allow to drain and cool off.
    2. Start making rice in a rice cooker
    3. Shell the edamame
    4. Brown ground pork in a pan. Add pickled snow cabbage, garlic, soy sauce and sugar to taste.
    5. Stir fry for a bit, then add all the edamame. Stir to combine.
    6. Assemble rice bowls and serve.
