This vegetarian chilli is easy but also ridiculously tasty. Great for batch cooking and freezing as required.

    Ingredients

    3 red onions
    4 gloves of garlic
    3 bell peppers
    Celery
    Chipotle paste
    Tinned tomatoes
    Vegetable stock
    Water

    Chop the onions and fry in a pan on medium heat, add salt to draw moisture out of the onions. Wait about 10 mins and then add garlic. When onions are soft and translucent add them with the garlic to the slow cooker. Spoon in your chilli paste.

    Chop all the vegetables and add to the slow cooker with the lentils, chopped tomatoes and add in the stock. Top up with water until you just about see the water level, doesn’t have to be completely covered. Put on low for 7-8 or medium for 4-6 hours.

    Serve with either rice, sweet potato or in a wrap.

    Vegan Chilli or was there an ingredient that made it Vegetarian?

    I love Lentils! Such a great substitution for meat. Also using Black Beans to make plant based is something I’ve definitely got to get more into. There’s so much health benefits eating food like your meal over a big slab of red meat.
