Cajun-inspired slow-cooked… something

    I will update once it’s cooked in several hours. Basically, I threw a bunch of stuff in a pot and I’m hoping it’s gonna be good. I made a roux… pretty dark, but maybe not dark enough. I was starting to be afraid I was burning it. It was definitely darker than my coffee with cream, but it wasn’t a rich, dark chocolate brown. But it was starting to smell a little acrid and I got nervous.

    So it has roux, a bunch of chicken stock, the trinity (onions, celery, green pepper), tobasco, Cajun, spices, andouille, I can of tomatoes, and a couple cans of kidney beans. And rice. I used brown rice because the rice I bought for it had rice weevils in it. Now I know rice weevils are a thing. And I don’t like them.

    I’ll probably add shrimp when I get home.
