Slow Cooked Dry BBQ Rubbed Chicken (slow cooked on stove for 3 hrs)

    My slow cooker lid shattered so I’m back to the basics of basics. This dish was accompanied by Onion Mashed Potatoes, Baked Brussel Sprouts and Onions with Homemade Honey Biscuits. I just wanted to highlight the chicken.

    Recipe for chicken:

    5 small bone-in skin-on chicken thighs (dried off)
    Oil

    Marinade/Rub

    1tbs of garlic powder
    1tbs of onion powder
    2tbs paprika
    1tbs cayenne
    1tbs chili powder
    2 tsp salt
    1tsp cracked black pepper
    1tsp lemon juice
    2 tsp brown sugar
    A lil vegetable oil

    Prepare:

    Mix together all the marinades dry ingredients and toss in the chicken. Add the oil and lemon juice. Mix and MASSAGE the ingredients together and into the chicken. Get under the skin and just UP IN THERE!!! Set aside for 1-4hrs. I did 1hr cause I was hungry

    Take stock pot and place on a medium high heat. Add about 2-3tbs of oil.

    When heated up, take chicken out and place skin side down. Sear for 5 min on each side.

    After searing, reduce heat to simmer, place lid on and simmer for 3 hrs. (Always check to see if liquid evaporated but it shouldn’t if u have it on a low and slow simmer level…but check anyways)

    After 3 hrs, turn in your broiler and line a pan with foil. Remove chicken and place upon said foil. When the oven is heated, place chicken in the oven for about 15-17min. Should get a good crust. If u want to go a bit longer just do it in like 1-2 min intervals cause burnt chicken skin isn’t very classy lol

    Serve chicken with any dinner of choice.
