I have all of the ingredients for the anchovy stock, but apparently it takes 30 minutes just to cook the stock. So even if it’s a bit of a downgrade, I’m wondering if there are some easily accessible quick replacements I can find at the store that would do mostly the same job. As many as possible please since the asian market near me is primarily chinese focused and doesn’t have as much selection.

Has anyone had experience with premade, powdered, kind of stuff etc?

I also have some other questions as well. 1. Is it necessary to have the korean stone pot or can I just use a regular pot and it would do mostly the same thing? 2. I bought a pack of “silken tofu” at the store, is that the same thing or an acceptable replacement? 3. If I used beef, how would I want to slice it?

1. You do not need a stone pot. Regular pot is perfectly fine.
2. Yes, silken and soon dubu are the same.
3. I would chop it up into smaller than bite size cubes.
I dont use anchovy/kelp stock half the time. Water is fine. When i do use stock, i use a pre-made kelp&anchovy stock pack. It only needs 5-10minutes.
I’ve used chicken stock, season it w soy sauce and/or fish sauce. You can jazz it up W clam in a can (w the brine too).
Silken tofu is the same.
Can’t speak to the beef as I don’t eat it.
Anchovy stock takes just 10 minutes to make using the kelp/anchovy/shrimp packets. You could also use the tablets for even less work.
Ueah, don’t need anchovy broth. Use any nroth you have. Pork, chicken, beef or veggie. If you don’t jave anything, use water or rice water
I always just use rice rinsing water. Sometimes if I have stock granules I use it. You can also get tea bags of dried fish and kelp and tablets.
