What I ate yesterday, ~1490 calories (meatless)

    Trying to go meatless at least a couple nights a week (almost never eat meat for breakfast, lunch, or snacks anyway), so here’s what I ate yesterday:

    Breakfast: 318 calories
    Over-medium egg on English muffin with 2 tsp buttery spread and Everything But the Bagel seasoning.
    Coffee with 1 tbsp heavy cream, 1/2 tbsp sugar, and 1/2 tbsp monkfruit/erythritol.

    Lunch: 253 calories
    Big Mac inspired salad: spring mix, diced pickles, grape tomatoes (just because I love tomatoes), 2 oz. Blackbird Texas BBQ seitan (diced and microwaved for 20 sec), 1/4 cup cottage cheese, 1 tbsp Kraft thousand island dressing, sprinkle of crushed Lesser Evil “no cheese” popcorn.

    Dinner: 514 calories per serving
    (4 servings)
    -20 oz mushrooms (mix of white, baby bella, and shitake), sliced
    -9 oz lacinato kale, chopped
    -1 can peas, drained
    -2 cups cottage cheese, blended smooth (used Nancy’s probiotic cottage cheese)
    -1/4 cup heavy cream
    -1 tsp Better than Bouillion No Chicken base
    -8 oz package of Chickapea brand linguine, boiled according to instructions (nutrition on box was more similar to the shells than the linguine in MFP so went with that)

    Sautéed kale for a few minutes then added mushrooms and Better than Bouillion, seasoned with black pepper, garlic powder, and red pepper flakes and cooked until soft. Added peas. Stirred in heavy cream and cottage cheese until heated. Added in cooked noodles and stirred until combined.

    Snacks:
    Decaf coffee with 1/2 tbsp heavy cream and 1/2 tbsp monkfruit/erythritol, not pictured. 25 calories

    Bell pepper, cucumber, grape tomatoes, and baby carrots in a dressing of 1 tbsp white vinegar, 1/2 tbsp olive oil, 1/4 tsp Trader Joe’s Green Goddess seasoning. 113 calories

    Broiled orange with cardamom and cinnamon and 2 tbsp Truwhip Keto (would have just bought some kind of Cool Whip but it wasn’t available). 112 calories

    1.5 servings PB2 Pantry Chocolate Chip Cookie mix powder with 1 tbsp unsweetened applesauce. Bought the mix on a whim. Wouldn’t buy again–didn’t turn out great when I tried baking them, so I’m just going to finish the jar by making this “dough.” 156 calories
