A hearty spicy kim chi soup for the spouse before work.
300g of pork belly 250g of kim chi 50g of kim juice 1 garlic clove minced Half a small onion sliced Tbsp Sesame oil 2 tsp of gochujang 1/2 tsp of fish sauce Tbsp of smoked soy sauce Tbsp sake 1/2 tsp of gochugaru 330g of chicken broth unsalted 300g firm tofu 1 egg
Seared the pork belly, then heated up the sesame and cooked out the onions. After a few minutes of sweating the onions I added the garlic. Cooked it another minute then added the gochujang, gochugaru, fish sauce, soy, sake and the pork belly. Coated the pork belly and then added the chicken broth. Heat to a boil then lower heat to simmer and cook the pork belly for 1.5 hours or until tender.( I just happened to get the pork belly cut thick and big and was lazy to cut them smaller, using other protein or small cuts will be less time to cook).
After 1.5 hours I added the kim chi and the juice, egg, tofu and mushrooms and let it come up to a boil. Added the green onions last. Served over some white rice.

It was a bit spicy but very tasty.
