Did our tri tip tonight! 24 hour dry brine with salt and 2 Gringos Chupacabra Steak Seasoning. 133° for 8 hours Seared with Wagyu Tallow on my 36 inch Blackstone at full tilt. Homemade chimichurri to top! Potatoes fried in wagyu as well.
