In a wok or cast iron, heat up 1 tbsp vegetable oil over medium heat. Add the onions and cook for 5 min. Add the peas and Carrots for 1 min. Remove onions, peas and carrots from the pan.
Add 2 tbsp oil to the pan, put the rice in and toss around in the oil for 2-3 min. Add season mix and soy sauce. Mix it into the rice.
Move the rice to one side of the pan, add the eggs and scramble. Once done, incorporate into the rice.
Add the veggies and pork and mix throughout the rice.
