This looks amazing! I love using meat like that for quesadillas, nachos, sandwiches. It looks very similar to the meat I made for tamales recently. It was pork with a chipotle-based sauce, but it also shredded so nicely and was perfectly red and juicy.

Lol why in a pinch? Enchilada sauce is a pretty good base for flavor for almost any Latin dish.

Herdez roasted hot sauce (green or red, whichever you prefer) is also great for this.
