I canned several jars of Nectarines in the fall (including some with booze). I’m confident that I did everything properly – supported by the many other jars that look fine. I did have one batch with 2 failed seals – one jar never sealed another sealed just as I was touching so I classified it as a failed seal. Both of those jars went in the fridge.
I found this single jar when cleaning the pantry that all the Nectarines are discolored. All my other jars look great. It has what seems like a proper seal. I’m tossing it but I’m trying to figure out what happened. Mostly from a curiosity point. It’s weird the entire jar discolored and not just the ones on top or a side exposed to light or something.
I’m figuring it’s just a false seal but I wanted to see if anybody had any ideas.

Kind of looks like mycelium. Strange. I have never had a failed seal. Do you use the lids that come with the jars? Any new jars I get, I just throw away the lids and use new ones bought separately.
