Easy Cheeseburger Casserole!

    **Ingredients**

    – 1 lb (454g) ground beef (use 93/7 or 96/4)

    – 3 slices center cut bacon

    – 1 oz (28g) white onion, diced

    – 1 tbsp (7g) burger seasoning (use prepackaged or combine 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1 tsp pepper, 1/4 tsp mustard powder, and 1/4 tsp dill seed powder and use half the mixture )

    – 3.5 oz (100g) cheese of choice (I use 70g mozzarella and 30g cheddar)

    – 4oz (112g) Philadelphia Neufchatel Cheese

    – 1/4 cup (50g) diced tomatoes

    – 2 tbsp (30g) Heinz no sugar/salt ketchup

    – 1 tbsp (15g) French’s yellow mustard

    – Splash of pickle juice

    – Optional – diced pickles

    **Instructions**

    1. Fry your bacon and remove from skillet. Let cool then cut into bits. Place bacon in your baking dish. Remove majority of the excess grease from skillet.

    2. Brown beef and onions in skillet, season with salt and pepper. Brown until any liquid has pretty much evaporated, but don’t make it dry as sand lol. Meat should still look a bit juicy. Once browned remove from fire

    3. Add half your burger seasoning and most of your bacon bits to the browned beef, saving some bits for topping

    4. In a bowl combine cream cheese, burger seasoning, tomatoes, ketchup, mustard and pickles then add to pan with a handful of cheese, using residual heat from the beef to melt and throughly mix into the beef.

    5. Add beef mixture to a greased 9×9 baking dish and cover top with remaining cheese and bacon. Bake covered with foil on 400°F/200°C for 15-20 minutes, the broil uncovered on low for another 5 to get a nice crispy top!

    Makes 2 dinner sized servings or 1 OMAD (1 serving is half the pan!)

    – 640 kcal (593 kcal without the bacon)

    – 5g net carbs (4g without the pickles)

    – 63g protein

    – 26g fat
