You had regular korean fried chicken. Idk which brand you bought but they all have their own “secret” recipe.

Cardamom is generally not used in Korea. They might have snuck a little curry powder in there or something.
Molasses maybe? Maybe from brown sugar instead of rice syrup or, less likely, dark corn syrup?
Gingerbread cookies get their flavor largely from molasses and ginger, so that might be the christmassy taste combination you’re getting.
