Pardon the messy picture, was too excited to eat. (Disclaimer: Noodles were store bought, freshly made from a local asian shop.
* Started a week earlier making a vegetable stock from scraps I’d been saving for 4 months, then added miso, soy, mirin, ginger and sesame oil to make the ramen broth. * Bottom is chicken mince fried in garlic, ginger, sesame oil, salt and white pepper. * Top is sesame oil fried shiitake mushroom. * Both with all of our favourite toppings: sweetcorn, nori, green onion, fried shallot, toasted sesame seeds, egg.
It was delicious, and I will be definitely making again.

Looks tasty👌 a bit more broth would make it smack
