    Noodles: The wide noodles are in fact ramen noodles. complete with alkaline salts. But they are also 9-10% semolina flour. Combined with being high hydration and cut wide & flat, they are bouncy and smooth like pasta.

    Mushroom Medley:
    Oyster mushrooms
    Trumpet mushroom scallops
    Wild yellowfoot chanterelles
    Wild maitake

    Dressing: Italian garlic oil, shio tare, lemon

    Other toppings: roasted plum tomato, lemon, dried parsley

    I am aware that this looks like just fettuccine. Happy Valentine’s Day!
