My biggest challenges cooking for my vegetarian husband is that a) he’s a big guy with a big appetite. A lot of veg recipes just aren’t filling enough for him. And b) he gets home late… so the dish needs to be ready earlier for me to eat and then still really tasty keeping on the stove or heated up without drying out etc.

This is my favorite recipe–White wine, mushroom risotto. It’s filling, easy (ish), and keeps so well. It makes the perfect dish for a dinner party too because no one doesn’t like it–even meat eaters.
