I never use bars but cocoa powder is a necessary ingredient in my chili. It gives it so much depth of flavor. It’s incredible. The spicier the chili, the more cocoa powder it gets.

I use 1 ounce of chocolate and a small amount of cinnamon in every chili batch.
Just enough to help cut the heat of the peppers, but not to distract from the taste.
Excellent addition to great chili

This is a hard pass for me… but I can also see how this would work well for the American palate. Every time I go to the US, I feel like I’m eating sugar bombs all day every day. Even the pizza dough is sweet.
