I made a really great dinner this weekend and thought I’d share, I only had to buy one eggplant. I had other ingredients on hand. It’s super customizable too.
Peel eggplant and cut in half the short way so you have two big chonks. Steam for 15 mins until soft.
Make a little sauce of equal parts soy and vinegar. I used 2T each and used a rice vin. Also added a pinch of sugar. Optional adds: garlic, miso paste, hot sauce.
Once the eggplant is soft, slice one of the chonks but not all the way through, just so you can open it kind of flat and then score the inside so it’s shallow cuts up and down in a grid.
Add a bit of oil to a pan and place the scored eggplant in the frying pan until it starts to brown. Flip and add the sauce until thick and browned on the second side.
Serve over rice. I also ate with nori but totally not necessarily. Added green onions if you have them.
So simple, healthy, and tons of flavor! Was so excited when I realized the cost, about $2 for the eggplant. Will totally make it again! Original inspiration from TikTok but you can also find similar recipes if you google Glazed Eggplant. Even my husband loved it and he doesn’t like veggies as much as I do.
