I baked my potatoes and they do taste quite nice, the taste itself kind of reminds me of chestnuts. I am quite confused by the pale color though since the ones I have seen in pictures and videos have a slightly yellow flesh instead of this color.
Cook them a lot longer! They will caramelize and be yummmm

There is Bam goguma (“chestnut”sweet potatoes) and hobak goguma (“pumpkin”sweet potatoes)
These ones are bam goguma! Hobak goguma has the strong yellow like yams

I’m not sure if these are korean sweet potatoes, or at least the ones I’ve grown up with are brown/purple thin paper-y skin and the inside is more yellow

The yellow ones you got before were probably yams, not sweet potatoes. This is a sweet potato. [https://extension.msstate.edu/blog/sweet-potatoes-vs-yams-what%E2%80%99s-the-difference](https://extension.msstate.edu/blog/sweet-potatoes-vs-yams-what%E2%80%99s-the-difference)
