Directions
1. Preheat the oven for 350°F (180°C) 2. In one bowl, mix together 1/4 cup (50g) granulated sugar, 1/4 cup (50g) brown sugar, 1/2 cup (113g) butter, 1 tsp vanilla extract, [Optional] 1 tsp ube extract (these are the wet ingredients) 3. Mix in 1 egg, and mix well 4. Fold in 1/2 cup (160g) ube halaya 5. In another bowl, mix together 2 1/2 cups (320g) flour, 1 tsp baking powder, 1 tsp baking soda, and 1 tsp salt (these are the dry ingredients) 6. Slowly pour 1/4 portions of the dry ingredients into the wet ingredients, until fully combined 7. Fold in 1 cup (175g) white chocolate chips, 8. Grease a baking pan with cooking spray – OR – put parchment paper down on a baking pan 9. Roll golf ball sized portions of dough, then place onto the baking pan 10. Bake at 350°F (180°C) for 9-10 minutes 11. Take them out of the oven, and let them cool for at least 20 minutes before consuming (or don’t… no judgement) 12. Enjoy!
