2 pounds of moose, fat shaved off as much as possible.
2 tbsp bacon fat
2 yellow onions
1 tbsp olive oil
1 pound white mushrooms, sliced
2 large carrots, sliced
2 large yellow potatoes (blue potatoes are better but weren’t in season), cubed
2 stalks celery, sliced
1 large turnip, cubed
1 large parsnip, sliced
1 liter of beef broth
1 can diced tomatoes
1 can corn
1 can lentils
1 can kidney beans
(Measurements don’t really matter for the above)
2 cups green peas
1/2 can of ‘heinz beans in tomato sauce’ (optional, I just had leftovers in the fridge and threw them in)
premade Ragin’ Bayman ([https://www.newfoundlandseasonings.com/](https://www.newfoundlandseasonings.com/)) spice mix: smoked paprika, sweet paprika, brown sugar, sea salt, black pepper, garlic, onion, Jalapeno, red chillis, and mustard powder.
I added garlic powder, onion powder, MSG, worcestreshire sauce and brown sugar, to taste.
If bacon fat stands out as odd, it’s because of the way moose is; we removed all the fat because that’s where the gamey flavor comes from, and it doesn’t melt like beef or pork fat does, so we had to add fat back in.
Recipe should be great with venison too!
