    **INGREDIENTS:**

    * 500g chicken thighs, boneless skinless

    * 1 branch of cilantro

    * 1 avocado

    * 3 garlic cloves

    * 1/2 lemon

    * 1/2 small pkg grape tomatoes

    * 1/2 medium red onion

    * ⁠black pepper

    * 2 tbsp extra virgin olive oil

    * salt

    **DIRECTIONS**

    1. ⁠Preheat oven to 200 Degrees Celsius.

    2. ⁠Pat 500 grams of the chicken dry with paper towels and place in a medium bowl.

    3. ⁠To a bowl mince or press 3 garlic cloves. Add black pepper, salt, and half of the lemon juice.

    4. ⁠Finely chop cilantro leaves and add half to the bowl. Add olive oil. Add the chicken and turn the chicken until well coated with the marinade.

    5. ⁠Place chicken in the oven and bake, turning once, until cooked through, 25 minutes.

    6. ⁠While baking chicken, halve the grape tomatoes crosswise. Add to the salad bowl.

    7. ⁠Small dice avocado and add to the salad bowl.

    8. ⁠Trim off and discard the ends of the onion and remove the outer layer; small dice the onion. Add to the salad bowl.

    9. ⁠Add the other half of the chopped cilantro to the bowl. Add olive oil and mix.

    10. ⁠To the remaining lemon juice, add salt, and black pepper and mix. Add it to the salad and mix it all together.

    11. ⁠Now dice your chicken thighs and serve.
