Tajarin Pasta with Porcini Truffle Butter Sauce

    **Ingredients**
    • 300 g Fresh Tajarin Pasta
    • 2 tbsp Unsalted Butter
    • 180 g Porcini Truffle Sauce
    • 1/4 cup Finely Grated Parmesan Cheese
    • Thinly Sliced Truffles optional garnish
    **Instructions**
    1. Bring a large pot of salted water to boil.
    2. Meanwhile melt the butter in a large frying pan set over a medium low heat. Add porcini truffle sauce and stir until combined.
    3. Then drop in the tajarin pasta to the boiling water and wait for it to come back to a boil then cook for just 1 minute. Do not cook for over a minute as the noodles will start to break down and fall apart as they are very delicate.
    4. Drain the pasta and add to the porcini truffle sauce. Toss together until combined.
    5. Serve immediately with grated parmesan cheese and optional sliced truffles.

    Tajarin is a local dialect for tagliatelle (cut pasta). Please make sure you go with the white truffles if possible and avoid the Chinese black truffles at all cost because they do not smell or taste like European truffles. This is a great basic recipe if you are a mushroom lover.
