I’ve made this several times in the past but I’ve wondered if I was doing it correctly because the meat tended to disintegrate as I tried to put it on the rack to grill it. (btw, this little rack I found is amazing for grilling beef bulgogi)
For example, can you marinate the meat for too long? Instead of thawing the beef before marinating it, I just pour the room temperature marinade over the beef and put it in the fridge for several hours until thawed.
Any preparation tips, or recipes for more authentic or healthier marinades are also welcome. I’m trying to get away from the preservatives they put in bottled and canned sauces, when possible.

I marinade with kiwi juice, Coca-Cola and brine. No joke. 24 hours
