How do I make the potato in this picture? I understand it’s baked and has butter, but what is making the creamy texture?

This is a photo on a chip bag that I got at H-Mart. The chips are good but now I want whatever this baked potato thing is too!

That’s just baked Korean sweet potato (goguma). Most Asian markets will carry this — it has a red skin and light yellow flesh. Poke some holes in the skin and bake it in the oven at 400F for about 45-60 minutes, until the potato is soft. Then you just peel off the skin and eat it.

Here’s what you do: preheat your oven to 425. Line a baking sheet with foil and put a rack on top of it. Pierce the sweet potato with a fork a few times, place it on a plate and microwave it for 9 minutes total in 3 minute intervals; turning the potato after each 3 minute interval. What you’re looking for is an internal temp of 200°. Once the internal temp of the sweet potato is at 200° place it on the rack that’s sitting on top of the baking sheet and bake it in the 425° oven for an hour. This will break down the cell structure of the sweet potato while getting rid of the water content. The result should be a nice and creamy sweet potato. Cut it open and top off with butter and honey or maple syrup to send it into overdrive.
