    1 can corn, drained

    1 can black beans, drained and rinsed

    1 can rotel

    1 cup salsa

    1 cup shredded cheese of choice

    1 cup sour cream (optional)

    2 cups brown rice, cooked

    Mix it all together and reserve half the cheese. I add adobo, sazon, and black pepper to season

    Top with remaining cheese and bake 50 mins at 350

    Makes 10 servings
