One of the most economical things a person can do to eat well on a budget is to save (and eat) the leftovers. Here’s a Mississippi Pot Roast Beef Manhattan on Sourdough. This has been 4 meals for us out of a $12 2lb roast.

2lb chuck roast 1 packet au jus mix 1 packet ranch mix Half of a 14oz jar of pepperoncini, with juice
Crock pot cook the roast for 6-8 hours on low, then serve with real mashed potatoes and a veggie – or several! (More veggies means healthier, more economical meals and more leftovers!) When that meal is over, store the potatoes with the roast beef and peppers so the flavors combine.
A couple days later, when lunchtime comes around, toast a generous slice of homemade (or home style Amish made) sourdough bread. You can use a regular toaster or if you have a few minutes, heat up your favorite griddle and make it Texas toast. You won’t regret it.
Layer the mashed potatoes first, then the beef onto the toast. Top with the pepperoncinis, then pour the remaining gravy over the top. The crispy toast and creamy potatoes with the tender roast beef make a riot of flavors and textures that make this leftover meal fit for royalty! Enjoy!
