    **Recipe x 4:**

    * Pasta 400gr / 14oz
    * Cherry tomatoes 200gr / 8oz
    * Ricotta cheese 70gr / 2,50z (I used seasoned Ricotta cheese home made by my family farmer from southern italy)
    * Basil, salt and EV Olive Oil to taste

    **Procedure:**

    1. Cut the cherry tomatoes in 4 parts, put them in a bowl with salt, EV olive oil and basil (10min)
    2. Put a pot with water on a medium heat and wait that it starts boiling (for pasta). Pot on the heat with EV olive oil and garlic
    3. Add the cherry tomatoes to the pan and cook for 7-8 minutes
    4. As soon as the water in the pot starts to boil, add salt and pasta. Add a little bit pasta water to the tomatoes
    5. Add a bit of boiling water in the tomatoes sauce stiring and add pasta al denta stirring e salta la pasta
    6. Serve the pasta adding EV olive oil, ricotta and fresh basil
