Day 2 of tracking – 1541 total calories

    Another delicious day! Today I upped the calories in my protein shake because I was so hungry after swimming. I the future I may move my workout time to before eating an actual meal (maybe in the morning before breakfast)….I felt very compelled to snack on all sorts of food this afternoon!

    Breakfast: omelette using Just Egg (egg substitute made from mung beans), filled with cauliflower, spinach, carrots, and Violife feta.

    Lunch: fried cauliflower rice with veggies and tofu

    Post workout smoothie: chocolate protein powder, almond milk, beet root powder, hemp seeds, banana

    Dinner: Mac and cheeze with peas and choloula

    Bonus: High Noon
