Tuesday’s eats: 1550 calories total with 96g plant based protein

    Happy Tuesday! I’m starting to see some progress both on the scale and how my clothes fit and that’s the best motivation to keep going!

    Today I ate….

    -Breakfast: tofu scrambled with mushrooms, soyrizo and nutritional yeast along with roasted brussel sprouts, buttered toast, red eye coffee

    -Lunch: vegetable, lentil, quinoa soup

    -Snack: remember the Dalgona coffee craze a couple years back? I randomly thought about it today and decided to make myself some over iced oat and almond milks blended with protein powder

    -Dinner: Chipotle inspired salad with cilantro lime rice, pinto beans, pea protein taco “meat,” avocado, vegan sour cream, hot sauce
