I made kimchi-jjigae from Maangchi’s recipe and it has quickly become my favorite soup/stew. I’ve remade it the exact same way every time, my only addition being enoki mushrooms to tweak her original recipe post.
Does anyone have suggestions of other things I could add or maybe protein swaps you like that I could try? I typically do pork belly and tofu.
