this was a super simple lunch! skip the caramelized onions to make it more time efficient, or just roast them with the tomatoes if you’d like.
recipe:
– start caramelizing some onions while you prep everything else
– roast baby tomatoes in zatar and harissa in the oven, roasted some garlic too while i was at it
– once those are cooked through, scoop them on top of the pita/flatbread and cover with pieces of fresh mozzarella
– put back in oven until cheese melts
– top with caramelized onions, parsley, and balsamic glaze. enjoy!
