Gochujang tofu and veggie stir fry with side red potatoes. 453 cal, 20g protein per meal

    I forgot to mention in the title that I used an air fryer 🤦 you can also get a pretty decent result pan frying the tofu with spray oil if you don’t have one.

    **Recipe for the stir fry**:

    Ingredients:

    * 1 block extra firm tofu

    * 2 heads of broccoli

    * 1 red bell pepper

    * 1 onion

    * 1 green onion bunch, preferably given to you randomly by some very friendly guy while on a bike trip

    * 11.5g / 2.5t canola oil (or oil of your choice)

    * 1/2 C water

    * 10g / slightly heaping 1T corn starch

    * Spray oil for air frying

    Sauce:

    * 2T gochujang paste

    * 1t sesame oil

    * 1T soy sauce

    * 25.5g / a slightly heaping 1T honey

    * 6.5g / 2.5t corn starch

    * Approx. 120mL / 0.5C water

    Method:

    1. Start pressing tofu.

    2. Keeping them separate, medium-to-large chop broccoli (stems and florets), bell pepper, and onion. Chop base of green onions and separately chop the green tops.

    3. In a large pan on the stove over medium heat, add the pepper, onion, and canola oil.

    4. Stir occasionally while it cooks, as you do the following:

    5. To make the sauce, mix the sauce ingredients excluding water in a small bowl. If there are clumps, it’s OK; over time they’ll soften and be easy to break up or dissolve on their own.

    6. When the peppers and onions start to look done to your liking, add the broccoli and bottoms/lighter parts of the green onions. Add water to the pan, and, if you have it, a lid. Meanwhile,

    7. Pat or drain the tofu and chop into pieces the size you want: not tiny and not huge, something medium-ish.

    8. Put into a bowl and add a heaping tbsp of cornstarch. With your hand, gently stir to coat the tofu. Wash and dry hands.

    9. If you put a lid on your pan, take it off and stir your veggies. (Continue stirring occasionally.)

    10. If your air fryer has an easy to insert tray, remove it. Preheat air fryer set to 375F for 12 minutes.

    11. Prep tofu for being added to the air fryer: spray the tray with oil, put tofu on, and then spray the tofu.

    13. When preheated, add tofu to air fryer.

    14. Stir clumps out of sauce. Add 1/2C water to your sauce and stir it in.

    15. When tofu is done, add it and sauce to pan.

    16. Stir and cook until the sauce is your desired consistency.

    The potatoes are boiled in salted water until done.
