    In this professional kitchen, an expert of fermentation science and Korean food scoops “white mold” out of a container of kimchi that hasn’t been touched in two years. He’s covering his nose and mouth out of concern for his health, but still plans on serving this to his customers.

    interesting choice of him.. my grandma would throw it right away in trash bins if she sees that much of white mold all over the kimchi, but I’m not a fermentation expert so what can I say

    I’m not Korean, but I’ve made many jars of kimchi and have never seen any mold or kham yeast, let alone that much of it.
