I could swear I saw something that said they still remove the leftover broth at the end of the day, clean the bowl and everything, then add it back and build on it the next day. So it’s not as bad as it sounds.

broth tastes better when cooked longer if tasty things are being extracted from the broth materials but can start tasting worse when cooked too long or overcooked
