Ever since one of my friends mentioned that Cédric Bouchard produced one of her most memorable champagnes, I have been on the hunt for champagnes from this famed producer. I’ve recently gotten my hands on half cases of Bouchard’s Les Ursules, Bolorée, and Haute-Lemblée.

Les Ursules: 100% Pinot Noir Blanc de Noir. Was not expressive when first poured into the glass. Initially smelled like heavily mineralized water but slowly opened up to reveal clean notes of white floral and fruits. Not much notes of yeasty and butter.

Bolorée: My favorite champagne of the theee. A Blanc de Blanc produced using very old Pinot Blanc. Much stronger and pronounced aromas and taste when compared to Les Ursules. Gave off notes of white floral, fruit, brioche. Despite Cédric Bouchard being known for low/zero dosage, this champagne gave off sweet feeling notes. Tasting friends said that this bottle reminds them a little bit of of champagne despite 2022 disgorgement. This old champagne taste could possible be because of the poor seal of this bottle’s coke.

Haute-Lemblée: 100% Chardonnay Blanc de Blanc. My least favorite bottle of the three. Upon opening gave off slightly funky notes accompanied by what I describe as natural apple cider. A tasting friend describe the notes as similar to the white pepper notes found in the spice mix for instant noodles. Funky notes dissipated after a while but by that time I was happily drinking Bolorée and did not revisit this cuvée until much later and much more tipsy.
