I have never seen garlic used like that and I’m extremely skeptical of any substantial exterior seasoning. I hope this was actually boiled correctly.

For the uninitiated/uninformed: there’s more than one way to cook mudbugs. Some of us actually prefer exterior flavors IN ADDITION to the flavor on the inside. It’s not one or the other: Viet-Cajun crawfish boil like normal but also toss in tasty flavors. Y’all should know by now one of the best things about the Texas culinary scene is all the mashups. Hell, I just saw a Greek/Mexican food truck yesterday.
Step outside your comfort zone y’all and try something new… who knows, you might actually like it 😉

These are absolutely the best crawfish in the world. They don’t taste like regular cajun crawfish, but they aren’t supposed to

I see there’s a bunch of crawfish noobs in here. Viet Cajun style crawfish is the only type of crawfish I will pay money for these days. For the unfamiliar read this article. H town does it the best, but there’s a few spots in Austin that get the itch out of the way.
