They have the BEST kung pao chicken i’ve ever tasted in my life, especially the texture and taste of the chicken. I’m no longer living in austin and i’d love to taste their kung pao again, hopefully from my kitchen.
Does anyone know how to recreate their kung pao chicken? Especially with instructions on how to recreate the taste and texture of their chicken. I’m pretty sure they double fry, but not sure what spices they use in their flour.

There’s a technique called “Velveting” that a lot of Chinese restaurants use: https://thewoksoflife.com/how-to-velvet-chicken-stir-fry/
I have never ordered Kung Pao chicken there because I can’t get past ordering things off Chef Special menu
Not a Chinese expert, that picture normally looks like Chongqin Chicken (double pepper?) chicken, not Kung pao.
Their mapo tofu is heaven on earth. My kid gets the vegetarian version as well which is also amazing.
They have the best chongqing chicken. Best Chinese in Austin. Where do you live now?
[www.woksoflife.com](https://www.woksoflife.com) has tons of mainland and Chinese-American dishes, I haven’t made a bad dish with their recipies. They also have buying guides if you are new to shopping at asian grocery stores as some products may not be labled in english. Great blog. edit: I also recommend “The Food of Szechuan” by Fushia Dunlop if you really dig that style of chinese and want a deep-ass nose dive into it. It’s definitely more technical than woks of life.
What’s the egg roll situation like? Are they real egg rolls or just fried spring rolls?
