I think Austin does Japanese really well here and see Tyson Cole come up often so decided to map out the lineage. Does this look right? Am I missing anything else? It certainly gets blurry with people having work experience at multiple places.

The non-Cole sushi standouts to me are Soto, Neighborhood Sushi, Chef Teddy Simon, and Tomdachi.

Revision 1 based on feedback. https://imgur.com/a/eOTiSSd

  2. Not a popular guy anymore, but Paul Qui came out of Uchiko to create East Side King and Qui.

Tsuke Honten should be between Kyoten and T Edomae.

You could throw in Kura in there for kicks but I’m not a fan personally. You have your newer sushi places like Sushi bar, Toshokan, and Sushi by Scratch.

  4. Tako and Tatsu both worked at Imperia back in the day as well, which a number of our current scene’s sushi chefs probably did also. Coincidentally, so did Chef Dre at Aviary…

  5. DK Sushi claims to be the oldest sushi bar in Austin.

Kyoto was the best sushi restaurant Austin has ever had. My grandmother-in-law was from Japan, and it was her favorite.

kome, Tatsuya, all stem from musashino. At least from my knowledge. And uroko stems from Kome. The owners of Kome for sure were at musashino first.

  8. Kenichi for sure was amazing and produced tons of talent that spread out around town, ichiban used to be amazing back in the 90’s and it’s somehow managed to stick around, dk sushi was always a service industry favorite for years, umi has been around forever too. What are you trying to map out exactly?

Shogun, formally at Menchaca and Slaughter, opened in the 80s, I think. I miss that place. Has to be up there with DK as one of the first

Blue sushi sake grill in the domain is definitely worth checking out 🙂 Reservations available on open table! It gets pretty busy during dinner hours Thursday through Sunday

I was gonna say the old school places like Kenichi and Sushi Sake probably have a less glamorous family tree underneath them but still influential.

Would Ichiban on Burnet be worth mentioning? I don’t know their history, so that’s why I’m asking.

Sarah Cook was before Michael Che. Her Kyoten became Tsuke Edomae when Otto stopped paying her to manage the place (during the pandemic).

This is a newbie tree. Go back to the late 80s when it was Korea House, then DK.

You’re also missing Kyoto which was above Elephant Room where Tyson worked as a lowly helper before he moved to Musashino.

  16. North edge of Austin but tomodachi is good sushi and not part of your rediculous fantasy that all good austin sushi has 1 origin.

I got this from Chef Teddy himself

    Chef Teddy stem from mikado

    Than kenobi at arboretum
Then start at piranha sous chef
    Then soto cedarpark
    Then jumpstart chinatown Westlake
    Then jumpstartnchinatown downtown
    Then jumpstart revelry kitchen bar
    Then piranha exec
    Then soto

    I helped Mike at tsukehonten

We part ways since Mike gonna do tsukeedomae and I want to start catering
