I think Austin does Japanese really well here and see Tyson Cole come up often so decided to map out the lineage. Does this look right? Am I missing anything else? It certainly gets blurry with people having work experience at multiple places.
The non-Cole sushi standouts to me are Soto, Neighborhood Sushi, Chef Teddy Simon, and Tomdachi.
Not a popular guy anymore, but Paul Qui came out of Uchiko to create East Side King and Qui.

Tsuke Honten should be between Kyoten and T Edomae.
You could throw in Kura in there for kicks but I’m not a fan personally. You have your newer sushi places like Sushi bar, Toshokan, and Sushi by Scratch.

Tako and Tatsu both worked at Imperia back in the day as well, which a number of our current scene’s sushi chefs probably did also. Coincidentally, so did Chef Dre at Aviary…

Kyoto was the best sushi restaurant Austin has ever had. My grandmother-in-law was from Japan, and it was her favorite.

kome, Tatsuya, all stem from musashino. At least from my knowledge. And uroko stems from Kome. The owners of Kome for sure were at musashino first.

Kenichi for sure was amazing and produced tons of talent that spread out around town, ichiban used to be amazing back in the 90’s and it’s somehow managed to stick around, dk sushi was always a service industry favorite for years, umi has been around forever too. What are you trying to map out exactly?

Blue sushi sake grill in the domain is definitely worth checking out 🙂 Reservations available on open table! It gets pretty busy during dinner hours Thursday through Sunday
I was gonna say the old school places like Kenichi and Sushi Sake probably have a less glamorous family tree underneath them but still influential.
