“The Soup” seems to be a very polarizing recipe on this subreddit – you either love it or hate it! So, I took comments from a handful of Redditors/the recipe reviews, and made a stove-top version, which I consider a lovely improvement!!

    Here is the recipe that I used! (and Chat GPT helped me build):

    Ingredients:

    * 1 medium yellow onion, diced
    * 1/3 cup all-purpose flour
    * 1 Tbsp Italian seasoning
    * 6 cloves of garlic, minced
    * 2 Tbsp tomato paste
    * 3 Tbsp butter
    * 4 cups chicken broth
    * 2 (14.5 oz) cans petite diced tomatoes
    * 1-1.5 lb ground hot Italian sausage or andouille sausage
    * Salt
    * Ground black pepper
    * 4 cups frozen cheese tortellini (or you can use fresh)
    * 3 cups packed spinach (you can definitely add more than this if you want)
    * 1/2 cup Parmesan cheese
    * 1 cup heavy cream or 1 cup half and half

    Instructions:

    1. In a large pot or Dutch oven, melt the butter over medium-low to medium heat. Add the diced onions and cook until they are soft and translucent, stirring consistently so as to not burn the butter, about 5-7 minutes.
    2. Add the minced garlic and cook for another minute.
    3. Add the Italian seasoning and tomato paste to the pot, and stir to combine.
    4. Gradually whisk in the flour, stirring constantly to prevent lumps from forming.
    5. Gradually whisk in the chicken broth, making sure there are no lumps in the roux.
    Add the diced tomatoes, salt (to taste, 2-3 tsp), and pepper (to taste, 2-3 tsp) to the pot, and stir to combine.
    6. In a separate skillet, brown the ground hot Italian sausage over medium-high heat, breaking it up into small pieces as it cooks, until it is just cooked through but still slightly pink. Drain any excess grease, and add the sausage to the pot.
    7. Bring the soup to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 30-45 minutes, or until the sausage is fully cooked and tender.
    8. Add the tortellini, spinach, Parmesan cheese, and cream to the pot, and stir to combine.
    9. Let everything simmer, uncovered, for another 10-15 minutes, or until the tortellini are cooked through and the soup has thickened.
    10. Serve the soup hot, garnished with extra Parmesan cheese and fresh basil, if desired.
