    Because overhead. Because labour. Because it’s what people will pay (and means the margins can be slightly less on other things).

    Is this a real question? Have you worked in or owned a restaurant, OP?

    You’re paying for labor, utilities, rent, etc.

    If the price of stuff offends you, learn to cook at home. Then do us a favor and open your 10 cent fry shop. I’m sure you’ll have a line out the door in no time!

    Because you aren’t paying just for the potato, obviously.

    When you eat out, even at a take-out place, you’re paying for someone to get that potato, slice it up, cook it, package it, and hand it to you. So the business you’re getting it from has to pay not just for the potato, but wages, rent, equipment, utilities, taxes, etc. None of those things are free. Then they need to mark it up to cover not just all that but hopefully make a profit too, otherwise they won’t stay in business long.

    Of course it’s much cheaper to eat at home if you’re only counting the base cost of the ingredients. But here’s the thing: if you have an income, *time is money.* You’d need to do the math to figure out what that amount is, but depending on how much your free time is worth, how many other people you’d be preparing the fries for, and a bunch of other factors like whether you enjoy cooking or think it’s a chore, the take-out option might be a much better deal.

    And yet, sadly, most of the restaurants go broke or close within 5 years because they don’t make enough money.

    My time is worth more than the money I’d save, especially when you factor in prep and cleanup of all that oil.

    Labour costs are huge. Utility and insurance bills are off the charts. Thankfully rent is dirt cheap in Toronto.

    Because they have to pay people to cut, season and fry the fries. They have to also buy the ingredients from the wholesaler who buys them directly from the farmers. Ever seen a food terminal before? Because that’s where the wholesalers are, selling produce to grocers and restauranteurs.

    All of this adds to the price of the newly finished potato product. That’s why it costs a lot.

    Simple rule to remember, at least if you are interested in eating out: the cost of food is rarely the main part of the cost of the dish.
