Hi! It is my understanding that [Suerte on East 6th](https://goo.gl/maps/bkdLcWbSXwSkZoPk7) makes their own corn tortillas from scratch by following the Nixtamalization process (soaking the corn kernels in water mixed with hydrated lime \[*cal* in Spanish\]) as shown on this youtube video: [https://www.youtube.com/watch?v=i4jrrZZf7pI&t=80s](https://www.youtube.com/watch?v=i4jrrZZf7pI&t=80s)
Are there other restaurants in Austin that go this hard on corn tortillas?
I know that Barton Springs Mill sells whole corn kernels of all colors for example [https://bartonspringsmill.com/products/whole-corn-kernels](https://bartonspringsmill.com/products/whole-corn-kernels)

As their name suggests, Nixta does it.
I’m not sure if Taqueria el Picante at 51st and airport makes them that way, but their corn tortillas are handmade and sooooooo good
Nixta taqueria really opened my eyes to this process. Since then I’ve noticed it at a few other restaurants around town but couldn’t name them off the top of my head.
ATX Cocina maybe too?
Con Todo currently parked at Celis on Metric does their own from scratch. And they just got voted best new truck 2022 by Eater. The tostada and the salsita picosita are serious business. Joseph is a really nice guy also and works super hard.
Cuantos Tacos utilizes this method I believe
Torchy’s

Texsueño
Also, all corn tortillas are made that way. Just not everywhere does it from scratch in house. Matt’s el Rancho is a big TexMex restaurant that does everything in house from scratch.
I’m not sure if La Santa Barbacha does the nixtamal in house or just makes fresh but the tortillas are excellent. Probably the best I’ve had in town.
Paprika and Un Mundo de Sabor both do. At least I was told that last time I ate there. These two spots are some of the best tacos in Austin and a bit of a hidden gem.
Chuy’s makes their corn tortillas from scratch, but not sure what process they use. They are amazing.
Masa y Mas has some of best corn tortillas (yellow and blue) I’ve ever had.
As an aside, if you have a good food processor, it’s really easy to make your own, and they are the best tortillas ever.
Taquero Vaquero makes their tortillas. They press them on a big wooden contraption when you order (not before). I think they grind their corn, but by the time I’ve seen the process they have a big tub of masa that they are drawing from.
La Condesa makes their own tortillas using the Nixtamalization process!
Comedor
You can also pick up great tortillas from Comadre Panaderia on the weekends!
Abolish Taco Deli
ATX Cocina does
There may be many restaurants and tortillerias that nixtamalize their own corn to grind, but there are only a few that are using heirloom corn sourced from indigenous farms in Mexico which will make a huge difference in the taste. The ones that do source heritage corn for their nixtamal that I’m aware of would be El Naranjo, Suerte, Comedor, Nixta Taqueria. Feel free to add to this list if y’all know of others in the area.
