Quick correction: Republique is in Mid Wilshire/La Brea area, not Beverly Hills. Beautiful and delicious spot though!

The amount of unpaid bills that restaurant had a few years ago 😟 idk how they stay open…. Unless they doing a lot better now.

My last experience there was many years ago possibly (8). I recall that one of the frustrations was a lamb dish, maybe lamb collar? Was too rare (lamb is not beef), sent it back for more cooking, still came out too rare to eat. I am a big lamb eater generally, and know what well cooked lamb should be. They did not serve that.

This photo made me go try Republique finally. Thanks OP! The burrito was very good but the service was pretty awful, unfortunately. They were serving our drinks and food on top of a completely unbussed table with tons of dirty dishes from the previous patrons still on it (this is after we asked 3 people to bus the table and after sitting down for over 15 min.). It really dampened our experience. I would try it for dinner when it is sit down service rather than the counter service during the day.
