    I love like the charred bits you get when you make Queso Birria Tacos. Like the crisp and bitterness from that well done shell cuts into the fattiness of the birria and cheese well. Some white onion and lime and you’re in heaven.

    I LOVE making birria tacos. The only thing is i can’t use too many dried chilis. Wifey has no taste for spicy spicy. I use like less than half those recommended on youtube.

    Oh and i love them with Oaxaca cheese
