I have zero idea why that URL says both “quick” and “easy” as it was not really either one!
The peeling, seeding and chopping of the squash is very time consuming. I needed two squash in order to get the 3-1/2 pounds. I wish I had done a whole apple instead of the half in the recipe. I just think that a little more apple flavor would have been great. The addition of the maple syrup is absolutely delicious.
I was not confident that 5 minutes in the Instant Pot was going to be sufficient, but I went with it and was pleasantly surprised to be wrong. 5 minutes in there is plenty.
The squash puree is one of the best things I’ve ever tasted. I could have eaten just that and been totally fine!
You may be tempted to skip the frizzled sage, but I am begging you to not do that! You need the brown butter for the recipe anyway, so just get some sage and throw it in there. It was amazing! I’d never had fried sage before and it was so good! Really a nice addition to this dish.
I would and probably will totally make this again. I’ll just know going into it that it’s going to be a little more time consuming that it implies.
